Testing the Most Insane Burgers on Tik Tok

You can go to 1000 different restaurants and you're probably going to be trying 1000 different types of burgers. For something that has such a simple set of ingredients, it's incredible how many different ways there are to prepare it. I think that's why people are so obsessed with burgers, there really are no rules. So what we're gonna do today, is head over to tiktok to sample some of the most unique and creative recipes out there. The goal of todays video is to answer the question: what actually makes the perfect burger? Click here to watch the full video. 

Oklahoma Style Burger

Ingredients:

  • 1/4 cup of mayo
  • 1/4 cup of ketchup
  • 1/4 cup of mustard
  • 4-5 slices of dill pickles, chopped
  • salt and pepper to taste
  • 1 onion, sliced thin
  • 1 pound of 80/20 ground beef (1/2 short rib 1/2 brisket)
  • beef fat to fry
  • 4 brioche burger buns
  • 8 slices of yellow cheese

Instructions:

  1. In a bowl, combine the ketchup, mayo, mustard, and chopped dill pickles. Mix to combine. Set aside until ready to use.
  2. With a grill pan on medium heat, spread some beef tallow to the pan and round up about 2 ounces of ground beef.
  3. Set the ball of ground beef down along with a healthy amount of sliced onions and a sprinkle of salt. Press it the onions down into the meat with a flat spatula and fry for 2 minutes. Flip, place two slices of cheese down and fry for another 2 minutes.
  4. Toast the brioche buns with the leftover burger fat and spread on some burger sauce in. Place the burger down and top it off with it's crown.

Lamb Burger

Ingredients:

  • 1 lb of ground lamb
  • 3 small red peppers
  • 1 head of garlic
  • 1 cup of ricotta
  • 1/4 cup of parsley
  • 1/4 cup of mint
  • 1 lemon
  • salt and pepper
  • 1 baguette
  • Pickled onion to serve
  • Arugula to serve

Instructions:

  1. Roast the red pepper and garlic either on the oven at 450 degrees Fahrenheit for 40 minutes or on a fire grill for 40 minutes. Rotate half way through. Once done, remove from heat and steam in a bag.
  2. Shape the ground lamb into two equal sized patties into a rectangle shape. Salt and set aside.
  3. In a food processor, add in, 1 cup of ricotta, 1/4 cup of parsley, 1/4 cup of mint, 1 lemon, the roasted garlic, and some salt and pepper. Blend until smooth. Set aside.
  4. Lightly drizzle some oil on the burgers and place oil side down on a pan or grill. Grill for 2 minutes before flipping and cooking for another minute.
  5. Cut your baguette into four pieces, drizzle on some oil, and toast for 1 -2 minutes.
  6. Deseed and remove the stem and skin off the red peppers. Chop finely and sprinkle with some salt.
  7. Once everything is done, start building the burger. Toasted baguette, down. Followed by the herbed ricotta, burger, pickled onion, arugula, chopped red peppers, and top it off with the baguette.

Bone Marrow Cheese Burger

Instructions:

  • 1 lb of bone marrow
  • salt and pepper
  • 1 onion, diced
  • Classic steak seasoning
  • 1 lb of ground beef
  • 4 slices of cheddar cheese
  • 2 brioche burgers buns

Ingredients:

  1. Roast the seasoned bone marrow on medium low heat for 10 minutes. Then, flip over and cook on low for another 30 minutes. Click here to see me make it!
  2. Place the diced onion into a cast iron pan, and add in the bone marrow. Let the onions caramelized until super soft and golden brown on low heat. Stir occasionally.
  3. Form your ground beef into 4 ounces patties and season both sides with the classic steak seasoning. If its too coarse, grind it up until it's finer.
  4. Grill one side, for 3 minutes and then flip. Place on some cheddar and fry for another 3 minutes. Drizzle some oil on the brioche buns and toast for 1 minute.
  5. Now that everything is ready, place down your brioche bottom followed by the burger, caramelized onions and finish with the top bun.
